Yummy Slice

I was pottering around & watching Twitter (as you do!) when I spotted a tweet from @EPtreasures that mentioned Arnotts Lattice biscuits. It immediately brought to mind a recipe that I remember from my childhood involving said bikkies.

It's a rich slice, so I only ever remember Mum making it for special occasions, but super simple. And you only need a little bit, so you don't feel too bad about eating it. (excuse the vague instructions.  Mum was never one to "follow" a recipe per se. Am sure she probably "stole" it from someone else along the lines anyway...)

Cream Cheese Slice (such a creative name!)

  • 2 pkts Lattice biscuits
  • 250g castor sugar
  • 250g unsalted butter
  • 250g Philadelphia cream cheese
  • 1 dessertspoon of gelatine dissolved in 1/2 cup boiling water
  • 1 tsp vanilla essence
Take a lamington tin lined with baking paper & cover base with Lattice biscuits. Cream butter & sugar together. Add cream cheese, vanilla & gelatine mix. Pour this mixture over the biscuits. Top with another layer of biscuits & refrigerate until set. Serve by cutting into small squares & dusting with icing sugar.

Wednesday Wishlist

Yesterday was December 1st, so traditionally our Christmas decorations went up. My tree is decorated in blue & silver, a combination that I still love to this day. I'm thinking I might colour coordinate my gift wrapping with it this year too.

New Ideas...

My poor blog has been greatly neglected of late. I have a trip to Brisbane to catch up with my sister in a week's time, so I've been getting organised for that. But, as always seems to happen, ideas & inspiration strike at the most unexpected times. And I can't ignore that rush!!

I was looking at Mandy's blog, and felt inspired by her gorgeous coin purse project. Now, this is no straight-forward inspiration. I can't sew. I haven't sewn since Year 7 Home Economics class (ahem... 17 years ago!)

But, not one to shy away from a challenge, I figured I'd give it a go. Well, I am hooked. Fun & simple, this sort of sewing was designed for someone like me  :)

Then the idea grew... and grew... and grew. I am still working on the finer details, but all will be revealed soon.

Celebrate... with a SALE

There is lots to celebrate here this weekend. Daylight Savings kicks off tomorrow night (yay for longer days!), it's a holiday long weekend and the NRL football grand final takes place on Sunday evening (and my team are playing - woot!)

So, what better way to celebrate than with a sale?

Wishlist Wednesday

Hooray, my hair is finally long enough to actually do something with it. It's been a long time coming though. I shaved it all off for the Leukaemia Foundation's Shave for a Cure in March 2008!
